STUNNING NZ SEAFOOD – Market Tour and Lunch

3hr class. Take a walk around the Fish Market with your chef then head upstairs to the Seafood School to create recipes utilising the pick of fresh species matched with seasonal and artisanal produce. Lookout for Waiheke Olive oil, Smoked cheese from Southland, Tamarind chutney, Wild wheat breads. Learn what to look for when purchasing your fresh seafood and discuss the variety of fish species, shellfish and crustaceans on display in the market plus optimal cooking techniques and flavours. Today the chef will create Smoked fish & mussel chowder, match shucked Oysters with caramelised leek and smoked cheese, along with No 29 Olive oil confit of fish belly with Mediterranean pickled vegetables.

Paulie Hooton

The Seafood School’s head chef, Paulie Hooton, has more than 25 years’ experience working in some of New Zealand’s most iconic restaurants. Before joining the Seafood School in 2017, he was Head Chef at the award winning The Oyster Inn on Waiheke Island.
