Japan is a sensory wonderland and its street food scene is no exception. Yatai are small food stalls that can be found along Japanese streets. These vendors offer an accessible and tasty selection of on-the-go dishes, with flavours of umami, spring onion, pickled ginger, caramel and citrus. Tonight cook salmon belly sashimi, pickled vegetables and nori vinaigrette, daikon and carrot salad followed by tuna tataki, wild mushroom and sesame.

Paulie Hooton
The Seafood School’s head chef, Paulie Hooton, has more than 25 years’ experience working in some of New Zealand’s most iconic restaurants. Before joining the Seafood School in 2017, he was Head Chef at the award winning The Oyster Inn on Waiheke Island.
