Seafood Sessions Local Restaurant chef – Executive Chef, Hilton Hotel Auckland

Join us tonight for a cooking experience with one of the leaders of our restaurant scene with a hands on cooking class, rub shoulders and learn tips and tricks from our guest chef . Tonight we have Uelese Mua the Executive chef of Hilton Hotel, Auckland. Known to his friends as Wallace, he is of Samoan Heritage and was born and raised in Auckland,  he has been in the local hospitality scene for a while but also spent a 6 year stint in France learning his craft, Wallace brings his love of Polynesian food with french influences to the Auckland seafood school tonight and has created 3 delicious courses. Start with Trevally tartar, followed by Cloudy Bay Clams with Pernod, saffron and kumara sourdough croutons PLUS roast market fish with a coconut tomato curry sauce, Mumbai potatoes and pepper drops.

Complimentary beverage on arrival.

Arrive anytime from 5.45pm onwards.  Class starts promptly at 6pm.

I have French influences in my style of cooking and I have a strong culture connection with my home Polynesian. But in saying that New Zealand is a mixing pot of different cultures which is super beneficial for chefs with regards to the flavours, styles of cooking and techniques we encounter.
