FAST AND FRESH – Fabulous Fritters

2½ hour class.  Look, Cook & Eat.

Everyone loves a fritter…..especially full of seafood.  Perfect on its own as a light meal or accompaniment to a main.  Tonight your chef will share three fritter recipes for you to try – mussel, seafood and paua* alongside a freshly made citrus aioli.  A side table of seasonal greens and fresh bread plus chilled artisan beers and Babich wines will complete the meal.  Tonight you will be cooking a delicious whitebait fritter with lemon mayo and mackenzie station seed bread.  Mussel and bacon  fritter, with salad leaves and  sweet pickled onions PLUS a paua* fritter with a shallot, caper and parsley salad with citrus cream.

Complimentary beverage on arrival.

Bar open from 5.30pm.  Class starts promptly at 6pm.

Paulie Hooton

The Seafood School’s head chef, Paulie Hooton, has more than 25 years’ experience working in some of New Zealand’s most iconic restaurants. Before joining the Seafood School, he was most recently Head Chef at the award winning The Oyster Inn on Waiheke Island.
