FAST AND FRESH – Everyday Delicious Seafood

2 hr class.  Cook & Eat.

For lunch today you will learn how to cook and prepare 3 delicious quick seafood dishes designed to fit into a busy weekday schedule or cooking at the bach.  Fish is one of the quickest meals to prepare – learn how to blend your seafood with seasonal and fresh flavours to ensure minimal cooking time and maximum flavour combinations.  New ‘Fast & Fresh’ class format is ‘Cook & Taste’ –will include a short demonstration by chef of how to prepare and cook your seafood.  Chef will be on hand to help you work through your recipes in the hands-on classroom. Start with grilled white fish with gremolata and panko, followed by Pan-fried snapper on a herb and vegetable gratin plus BBQ chorizo, squid and red onion.

Complimentary OJ on arrival.  Class starts promptly at 11am.

John Campbell

John Campbell trained in New Zealand before travelling to Sydney and through Asia, surfing whenever there were waves. He landed in London and worked in restaurants and hotels while gaining a certificate in Advanced Cookery at Westminster Catering College.
